Tasty Ways to Eat More Kale

Kale, like a wide range of other edible greens, is extremely nutritious, and one of the few green vegetables able to survive the winter here in England.

Tough and fibrous it's not the easiest of food to enjoy eating raw.

Here are two of my favourite ways to eat raw kale.

1. Juice It!


Kale leaves have a tough central stem and can be juiced successfully by some of the larger centrifugal juicers, as well as by all types of masticating juicers. If your using a centrifugal juicer and it struggles to juice the whole kale leaf - the smaller models often do - then use the softer outer portion of the leaves in a salad or smoothie (see below), and just juice the stems.

Ingredients - Serves 1-2

  • 3 large kale leaves, or several kale stems
  • 4 apples
  • Half a lemon

How to make

  1. Wash the kale
  2. Wash and core the apples
  3. Cut the rind off the lemon
  4. Chop to fit your juicer
  5. Juice and enjoy

Tip: Add less kale for a sweeter juice, or more for a greener experience.

2. Blend It


Create a tasty fiber rich smoothie by blending kale leaves with fresh fruit. The fiber acts like a sponge drawing toxins from the body and helps to keep the colon clean.

Green Smoothie Recipe with Kale

Ingredients - Serves 1-2

  • 3 oranges
  • 2 ripe bananas
  • 1 large kale leaf

  • Optional Extras

  • 2 cups of water
  • 1 teaspoon of almond butter
  • 2 soaked dates
  • A few drops of vanilla extract

How to make a Green Smoothie with Kale

  1. Juice the oranges, and pour into the blender.
  2. Next peel, slice, and add the bananas.
  3. Wash the kale and tear the soft outer portion of the leaf from it's stalk. Add the torn leaf to the blender, but don't add the stalk - keep it for juicing!
  4. Add the water, almond butter, dates, and vanilla if using.
  5. Blend and test for sweetness.
  6. Make any adjustments necessary and blend again.
  7. Serve and enjoy.

Tip: I find adding the vanilla makes the kale taste really good.
