Sunshine Juice for a Winter's Day

Here in England the shortest day is fast approaching, and with precious little sunshine outside I love to drink this vibrant orange sunshine juice.

Carrot Sunshine Juice Recipe

Ingredients - Serves 1-2

  • 3 large carrots
  • 1 apple
  • Half a lemon
  • 2cm slice of ginger root

How to make Carrot Sunshine Juice

  1. Wash and slice the carrot to fit your juicer.
  2. Wash, core, and slice the apple.
  3. Cut the peel off the lemon, or leave it on if you like it extra strong.
  4. Peel the ginger.
  5. Juice and enjoy.

Tip: Try leaving the peel on the lemon, but just use a quarter of one.


I am also in love with adding ginger and lime to my green smoothies. I don't know why I never thought of it before!

Cold Blasting Green Smoothie Recipe

Green Smoothie Ingredients - Serves 1-2

  • 2 oranges
  • Half a lime
  • 1 or 2 ripe bananas
  • 3cm cube of peeled ginger root
  • A large handful of either baby spinach, mixed green salad, or parsley.
  • 1-3 soaked dates (optional)

How to Make

  1. Juice the oranges, and add the juice to the blender.
  2. Add the peeled, sliced bananas, and the washed greens.
  3. Cut the peel off the lime, and add into the blender.
  4. Slice and add the ginger, and add the dates if using.
  5. Blend until smooth, and enjoy.
If I'm very hungry I like to add a large handful of soaked almonds and a couple of teaspoons of shelled hemp seed.
