What do you mean by forking regarding harvesting wheatgrass?
I assume you mean the shape, but want to be sure.

Wheatgrass - Best time to harvest.

When wheatgrass first grows it has a single shoot.
After about a week a second shoot starts to grow, or fork out, from near the base of the wheatgrass.

This is what I mean by when the grass starts to fork, and is the best time to harvest the grass.
